My friend Alex who’s now based in Singapore requested a recipe of “See po” a popular dish in pampanga. I am not sure if it is supposed to be spelled as sipo or sepo so I checked some old Kapampangan Cookbook. This recipe comes from “Finger Lickin’ Pampanga Delicacies by Mariano Henson circa 1976”. Basically it’s sauteed shrimp, peas, hard boiled quail eggs in shrimp stock. We sometimes substitute the shrimps with diced chicken breast. We can also add chicken liver or toasted cashew nuts for the crunch. Anyway here’s the earliest recipe of that dish.
